Carigara New Town Kitchen

Just six days ago, I said I would come back to this place. But I did not expect it would be this soon!

Anyway, I do not have much to say other than, the Lolas were friendlier today, not so busy since we there are (ate lunch) at 11AM. I took pics of the "aparador" where they put/keep their food on display!

Oh okay, Mano Sepring, my driver today, says this is called a "lansena" (lancena?), not "aparador"!

While I seem to have "expertly" avoided the glares and reflections on this shot, let me clarify that the cabinet (okay fine, lansena) is glass all over. So, no langaw or other insects whatsoever. Hygienic!!!

The lowest shelf (lower than my knee) contains mostly sweets (desserts) like "torta", "bukayo", "biko" - although there is also "tableya" for sale (right front corner). Second level shelf (about the height of my stomach) are mostly the yummy fare for the day! Top shelf are Carigara delicacies like cookies, etc.,

Ah, special mention... do you see that "palayok" (clay pot) on the right edge of the pic? That contains the OMG sinfully delectable "humba"! I mean the real humba. Waray-waray humba is similar to that of the Batangas version (with less or no vinegar), I think. But, definitely not the Cebuano version. Humba in Cebu is actually just the lowly "adobo" that we see served at many turo-turos all over this country!

Clockwise starting from front-left:
-lechon kawali (one of the Lolas call this "carahay") - yumminess - crispy outside, moist inside;
-fried fresh pusit (about the size of my palm) - you have got to try that - the aroma alone is ohhlalala;
-similar to "okoy" but big shrimps - di ko kaya, kelangan balatan;
-their take on pinakbet;
-adobong pusit but also big squid sizes (my favorite);
-something menudo or mechado; and
-fried fresh fish (also big) sizes - my second fave!
NB: they don't have Mang Tomas for the lechon kawali, but toyo with onions, garlic and calamansi was fine!
